Raw Sugar

Raw sugar is one of the least refined types of sugar and probably the most popular alongside white (table) sugar. It is my go to sugar and the only one I use in all my recipes :).

The juice from sugar canes or beets is cleaned, concentrated and then crystallised . A by-product of this process is the removal of molasses from the juice. The more “processed” a sugar product is, the more it has had the molasses removed and other products added to it.

Raw sugar is considered less “processed” as it retains some molasses, unlike white sugar that has had all the molasses removed and is also bleached.
